Tomato Bread Salad
ingredients
- 3 lbs. ripe tomatoes, cut into large chunks
- 2 cups thinly sliced red onion
- 1 cup slivered fresh basil
- 2/3 cup olive oil
- dash of red wine vinegar
- salt and pepper
- 3 cups Herby Garlic Croutons (see below)
- 3 tbls. butter
- 3 tbls. olive oil
- 3 cups stale bread cubes
- 2 large garlic cloves
- 1 ts. chopped fresh parsley
- 1 ts. snipped chives
- 1 ts. fresh tarragon
- 3 tbls. grated parmesan
- Heat butter and cook bread stirring constantly 3-4 minutes. Reduce heat to medium-low. Add garlic and herbs. Continue to cok tossing frequently about 20 minutes. Transfer to bowl and add parmesan. Cool at room temperature and store in air tight containers until ready to use.

Combine the tomatoes, onions, basil, oil, vinegar, salt and pepper in a large bowl. Add croutons just before serving.
