Spinach-Cheese Squares
The best kind of cheesy, comfort food, these spinach squares steal the show at any dinner party!
ingredients
- unsalted butter for greasing baking dish
- 4 large eggs
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 packages (10 ounces each) frozen chopped spinach,thawed, squeezed dry
- 1 container (8 ounces) whole milk ricotta cheese
- 1 1/2 cups sharp cheddar cheese, shredded (6 ounces)
- 4 green onions, chopped (about 1/2 cup)
- 3 tablespoons baking mix (flour or pancake mix also work)
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped

Preheat oven to 350F. Butter an 8 square baking dish and set aside.

In a large bowl, beat eggs, salt and pepper with a fork until combined.

Add spinach, ricotta, cheddar, green

onions, bake mix, parsley and dill; mix well.

Pour spinach mixture into prepared baking dish. Bake 45 minutes, until center is set and top is golden brown.

Allow dish to rest for 3 minutes before serving.
