David's Lemon Cookies
This is a family recipe from way back--sweet soft cookies with a sweet/tart frosting. Yum!
ingredients
Cookies- 1 C softened butter
- 2 C sugar
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 4 C flour
- 1 orange (rind and juice)
- 1 1/2 C milk
- 3 C powdered sugar
- juice of one lemon
- lemon rind
- 2 Tbsp melted butter or margerine, cooled

Sift together the baking powder, baking soda, flour, salt and orange rind in a bowl. Set aside.

In a small bowl, combine the milk and orange juice.

Cream together the butter and sugar. Add the eggs and mix until incorporated. Alternate adding the flour mixture and the milk/juice mixture until all ingredients have been incorporated.

Drop small spoonfuls of batter on a greased cookie sheet. Bake at 375° for 8-10 minutes. Frost while warm.
Frosting
Combine butter/margerine, powdered sugar, lemon juice and rind. Frosting will be slightly runny but should be thick enough to stay on the cookies without running off excessively. Add more juice if the frosting is too thick. Spoon about a tablespoon over each cookie while the cookies are still warm.
