Sean's Roasted Potatoes
Be sure to use Yukon Gold potatoes as they are rich and creamy and truly make this dish.
ingredients
- 1 - 2 lbs. baby Yukon Gold potatoes
- 3 sprigs of fresh rosemary
- 1 whole head of garlic
- 2 Tbs. olive oil
- salt
- pepper
- carrots, peeled and chopped (optional)

Preheat oven to 425°.

Chop potatoes so that they are all equal in size. Do the same with the carrots if you are adding them. Smash the head of garlic and separate the cloves. Add potatoes, carrots and garlic to a foil lined baking sheet. Add olive oil, rosemary and salt and pepper. Mix together on baking sheet.

Roast for 40 minutes until potatoes are golden brown.
