Healthy Bran Muffins

ingredients

  • 3 cups whole bran cereal (not flakes) (I use All Bran Bran Buds)
  • 1 cup chopped dried apricots & 1 banana chopped into small pieces
  • 1/2 cup ground flax seeds
  • 1/2 cup canola oil or cooking oil
  • 1 cup boiling water
  • 2 cups buttermilk
  • 2 eggs slightly beaten
  • 2 1/4 cups flour
  • 1/2 cup chopped walnuts (optional)
  • 2/3 c. brown sugar
  • 2 1/2 teaspoons baking soda
  • Nonstick cooking spray

    1. In a very large bowl, combine cereal, dried fruit, ground flax seeds, and oil. Pour boiling water over mixture. Let stand for 5 minutes.

    2. In a medium bowl, combine buttermilk and egg.. Add buttermilk mixture to bran mixture; stir to combine.

    3. In a large bowl, stir together flour, nuts (if desired), brown sugar, and baking soda. Add to bran mixture. Stir just until moistened (do not over mix). Let stand for 15 to 20 minutes. Fold (with a spoon) banana into mixture last

    4. Meanwhile, preheat oven to 400 degrees F. Spoon batter into paper cupcake cups, filling each about 3/4 full. Bake about 15 minutes or until a toothpick inserted in centers comes out clean. Remove muffins from muffin pan to cool . Serve warm.
