Vegetable Soup
ingredients
- 2 potatoes chopped
- 2 sweet potatoes chopped
- 1 onion, finely chopped
- 1 tbs olive oil
- 3 cups vegetable broth
- 2 zucchini
- 1 can corn
- 1 can kidney beans
- 1 can northern beans
- 2 cans chopped tomatoes
- Salt and pepper to taste

Put the potatoes in a microwave safe dish and heat for 10-15 minutes, or until they are cooked.

Heat the olive oil in a soup pot. Saute the onion until they are light brown. Add the potatoes and vegetable stock, cooking for 5-10 minutes.

Add the zucchini and cook for another 5 minutes.

Add the corn, beans and tomatoes and cook for 5-10 minutes. Add salt and pepper to taste.

Feel free to adjust the amount of vegetables to your taste. Use more or less corn, beans, etc.
