Spanish Rice (spicy)
I got this recipe from my favorite recipe website Ree Drummond’s The Pioneer Woman. Everyone loved it. I used it in the Mexican Lasagna recipe I got from her website.
ingredients
- 4 cups Unprepared Rice
- 8 Cups of Low Sodium Chicken Broth
- 4 whole Tomatoes
- 1 extra large Sweet Onion
- 8 cloves Of Garlic
- 2 pkgs of Taco Seasoning (should be 4 tbsp per pkg)
- 1-16 oz can Black Beans
directions
Begin by cooking rice in chicken broth. Into a large skillet add two tbsp of butter and chopped tomatoes, onions, and garlic. Saute. Add 6 tbsp of tace seasoning. Stir until nicely combined. Add in black beans...no need to drain. Mix cooked rice together with tomato/onion/garlic/black bean mixture. Voila!
