Pumpkin Pie
ingredients
- 1 1/2 cups canned or fresh pumpkin
- 3/4 cup brown sugar
- 1/2 tsp salt
- 1 1/4 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 3 eggs, slightly beaten
- 1 12 oz can evaporated milk
- 2 9-inch unbaked pie shells

Combine pumpkin, sugar, salt and spices. Blend in eggs and milk. Pour into pie shells. Bake in hot oven of 400° for 50 minutes, or until knife inserted halfway between center and edge comes out clean. Cool.

You may want to cover the pie with foil to keep the crust from burning.

Fresh pumpkin puree is best.
