Whole Wheat Bread
ingredients
- 3 cups water
- 1/4 cup honey -- or sugar
- 1/4 cup oil -- or butter or shortening
- 1 tablespoon yeast
- 1/2 cup powdered milk
- 1 1/2 teaspoons salt
- 8 cups whole wheat flour -- freshly ground
directions
Combine water, honey, oil and yeast to prove yeast. Combine powdered milk, salt and flour in mixer. Mix. Add yeast mixture. Mix. Add enough flour until it cleans the sides of the bowl and is soft elastic dough. If kneading by had, stop adding flour while the dough is still somewhat sticky and knead it with oil on your hands. It should be very soft, just manageable. Resist the urge to put in too much flour or your bread will be dry and crumbly.
Let rise about 1-1/2 to 2 hours. Punch down dough. Shape into 3 loaves. Let it rise until not quite double in bulk.
Bake at 350 (325 for glass pans) for 45 minutes. Cool on wire rack and cover with a damp towel. Freeze or refrigerate.
