Makes 3 dozen rolls

ingredients

  • 2 1/2 cups water
  • 3/4 cup honey -- or sugar
  • 3/4 cup oil
  • 2 1/3 tablespoons yeast
  • 1/2 cup powdered milk
  • 2 teaspoons salt
  • 2 eggs -- or 4 ounce tub of applesauce
  • 9 cups whole wheat flour -- freshly ground

directions

Combine water, honey, oil and yeast to prove yeast. In your mixer combine powdered milk, salt, eggs (or applesauce) and flour. Mix. Add yeast mixture. Mix.

Let dough rise (about 1-1/2 to 2 hours). Punch down dough. Shape into rolls. Let rise to more than double in bulk.

Bake at 350 for 20 minutes. Brush tops with butter; serve hot or cold. Freeze or refrigerate.
