Chicken Pie

  • 1 medium onion, chopped

  • 1 clove garlic, minced

  • ¼ cup (½ stick) margarine

  • 2 tablespoons flour

  • 10 oz chicken

  • 10 oz frozen mixed vegetables

  • ¼ teaspoon thyme

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

  • 1½ cups soy milk

  • 1 frozen pie shell + crust

  • 1. Preheat oven to 375 degrees

  • 2. Saute onions and garlic in margarine until soft. Add flour, mixing well.

  • 3. Add milk; stir slowly until mixture is thick and bubbly. Mix in thyme, salt, and pepper.

  • 4. Put vegetables in a colander and run cold water over them to thaw a bit. Add vegetables and chicken to pan; cook filling until just warmed.

  • 5. Take pie shell out of freezer and fill. Top with warmed crust and cut 3-4 vent holes with the tip of a knife.

  • 6. Cook until crust is golden brown. Let cool 10 minutes before serving.
