1 medium onion, chopped
1 clove garlic, minced
¼ cup (½ stick) margarine
2 tablespoons flour
10 oz chicken
10 oz frozen mixed vegetables
¼ teaspoon thyme
¼ teaspoon salt
¼ teaspoon pepper
1½ cups soy milk
1 frozen pie shell + crust
1. Preheat oven to 375 degrees
2. Saute onions and garlic in margarine until soft. Add flour, mixing well.
3. Add milk; stir slowly until mixture is thick and bubbly. Mix in thyme, salt, and pepper.
4. Put vegetables in a colander and run cold water over them to thaw a bit. Add vegetables and chicken to pan; cook filling until just warmed.
5. Take pie shell out of freezer and fill. Top with warmed crust and cut 3-4 vent holes with the tip of a knife.
6. Cook until crust is golden brown. Let cool 10 minutes before serving.
