Barbecue Chicken Quesadillas

ingredients

  • 8 x 20cm flour tortillas
  • 2 cups shredded barbecue chicken
  • 2 cups grated cheddar cheese
  • 1/2 cup coarsley chopped coriander
  • 1/2 cup chopped red onion
  • 1 heaped tablespoon pickled jalapeno
  • 1/3 c barbecue sauce

    Preheat oven to 120°C.

    Arrange the tortillas on a work surface. Divide the chicken, cheese, coriander and jalapeno among the tortillas, scattering the ingredients over 4 of the tortillas. Sprinkle with salt and drizzle a tablespoon of barbecue sauce over each. Place the other 4 tortillas on top.

    Heat a large frying pan over medium-low heat. Spray with cooking spray to ensure the tortillas do not stick. Place quesadilla in the pan and cook for 3 minutes on each side or until tortillas are crisp and cheese has melted. Transfer quesadillas to a baking sheet and keep warm in the oven. Repeat with remaining quesadillas. Cut into wedges and serve.
