One Skillet Potatoes, Sausage, and Peppers
ingredients
- 2 Links sausages, sliced
- 1 Onion, sliced
- 4-5 Potatoes, chopped into bite-sized pieces
- 1 Yellow/Red/Green bell pepper, julienne
- 1 Tomato, diced
- 2-3 Cloves garlic, minced
- 1/4 Cup white wine (optional – if you don’t have it, substitute more chicken stock)
- 1/4 Cup chicken stock
- Squeeze lemon juice
- 1 Teaspoon salt
- 1 Teaspoon pepper
- 1 Teaspoon red pepper flakes
- 3-4 Tablespoons extra virgin olive oil

1. Wash and chop your potatoes. Heat about 2 tablespoons of olive oil in a large skillet and add the potatoes. Cook for about 8 minutes on medium-high heat. Add in your sliced onions, 1/4 cup of white wine, and 1/4 cup of chicken stock. Cook for another 5 minutes.

2. Add in your sliced bell peppers and sprinkle everything with salt and pepper. Toss well to coat. Add more olive oil, white wine, or chicken stock if necessary. Cook for another 5 minutes. Add in your tomatoes and garlic.

3. Add in your chopped sausages and cook for 10 minutes, squeeze some lemon over everything, stir, reduce heat, and cover for another 10 minutes. Sprinkle with some red pepper flakes if you like. Make sure your potatoes are tender and the sausages are cooked through.
