Christmas Caramels
Bite size heaven!
ingredients
- 1/2 cup butter (one stick)
- 1 pint heavy whipping cream
- 3/4 cup light Karo syrup
- 2 cups white sugar

In large cooking pot add all ingredients. Simmer to a boil, stir just a little (you do not want to over stir).

Check it occasionally, let it continue to boil for about an hour or more, and when the color gets darker put the candy thermometer in (not touching the bottom of the pot). Temp should eventually reach around 242-245. HINT, when the temp gets around 242 spoon a little of the caramel into a cold glass of water...form into a ball and taste to see if the consistency is too soft, hard, or just right!

Pour into a 9x13 inch greased pan. Place caramel filled pan on a cookie sheet to make sure bottom of pan cools. Let stand for 1 1/2 hours. When caramels are done setting, cut around the edge of the caramels to loosen from pan. Flip upside down onto a large cutting board or clean hard surface. Pound on back of the pan until the sheet of caramel falls out. Cut with large knife 1x1 inch squares of caramel. Wrap in waxed paper cut pieces. YUMMY!
