Banana Muffins with Chocolate Chips and Walnuts
ingredients
- 1/2 cup vegetable oil
- 1 cup brown sugar
- 1 tablespoon EnerG Egg Replacer mixed with 4 tablespoons water
- 3 cup mashed bananas
- 1 cup all purpose flour
- 1 cup whole wheat flower
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 1/2 cup chocolate chips
- Large handful walnuts, chopped

1. Preheat oven to 350°

2. Stir together the oil, sugar, egg replacer, and bananas until smooth.

3. Add the flour, baking powder, baking soda, salt, and vanilla. Stir until blended.

4. Toss in the chocolate chips and chopped nuts. Be generous.

5. Spoon batter into muffin tins and bake about 20 minutes or until tops are brown.
