Chocolate Cake with Chocolate Ganache

Cake ingredients- 2 cups brown sugar
- 1 3/4 cups whole wheat flour
- 3/4 cups unsweetened cocoa powder
- 1 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 cup soy milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 8 oz good dark chocolate, chopped
- 1/4 cup soy milk
- 2 tablespoons maple syrup

1. Heat the soy milk for the frosting in a small saucepan until it boils. Take it off the heat; add the chocolate and syrup, stirring with a spatula until smooth. Let cool at room temperature.

2. Preheat the oven to 350°.

3. Mix together the sugar, flour, cocoa powder, baking soda, and salt.

4. Add the soy milk, oil, and vanilla. Beat for 2 minutes.

6. Pour the batter into an 8-inch square pan.

7. Bake for 35-40 minutes. The cake is done when a toothpick stuck in the middle comes out clean. Cool completely before frosting.
