THAI SHRIMP AND NOODLES

Sue recently made for Grandma and Grandpa. Grandma mentioned that since she no longer cooks, she craves certain recipes.

ingredients

  • 1 # shrimp
  • 1/3 C Newman’s Italian dressing
  • 2 T chunky peanut butter
  • 1 T soy sauce
  • 1 T honey
  • 1 t fresh ginger root
  • 1/2 t crushed red pepper
  • 2/3 c italian salad dressing
  • 1 8 oz. package of Angel Hair pasta
  • 2 T oil
  • 1 T Sesame oil
  • 1 med carrot, shredded
  • 1 C chopped green onion
  • 2 T chopped cilantro

    Mix one pound of medium shrimp, shelled, and deveined with Newman’s italian dressing. Marinade for at least 1 hour. In a small bowl, mix peanut butter, soy sauce, honey, ginger root, red pepper, and italian dressing. Set aside.

    After shrimp has marinated, prepare angel hair pasta. In a four quart pan, heat oils. Cook for one minute, carrots and green onion. Add shrimp, and cook until opaque. Add peanut butter saue. Toss with noodles. Top with cilantro if desired.

Grandma has substituted boneless, skinless chicken breasts for shrimp.
