Asiago and Turkey Capsicums
Cheese is a wonderful invention; and there are so many different varieties of it! Spending nearly a week nibbling on asiago cheese (with the occasional glass of wine), helped me to slowly develop this recipe. Eventually the taste became apart of me and then suddenly all new options were revealed. The wine was such a fine accompaniment, I decided to add that to the recipe too...
ingredients
Stuffed Capsicums:- 1 lb ground turkey
- 1/2 cup fresh cilantro, chopped
- 1 cup bread crumbs
- 1/2 onion, finely chopped
- 1 clove garlic, finely chopped
- 1/2 cup cooked rice
- 1 tsp tabasco sauce
- 1 tsp salt
- 1 tsp ground black pepper
- 1 egg
- 2 green capsicums (peppers), cored and halved
- 4 tbsp butter
- 3 tbsp flour
- 1 shallot, finely chopped
- 3/4 cup white wine
- 1/2 cup sour cream
- 1/2-3/4 cup asiago cheese
- 1/2 tomato, chopped
- 1 tbsp dried cilantro
