Oatmeal Cake and Topping
ingredients
- 1 1/2 cup boiling water
- 1 cup quick oats
- 1/2 cup salad oil
- 1 1/2 cup flour
- 2 tsp. cinnamon
- 1 tsp. soda
- 1/2 tsp. salt
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- Topping:
- 1 stick oleo
- 1 cup brown sugar
- 1/2 cup milk
- 1 can coconut
- 1 tsp. vanilla
- 1/2 cup chopped pecans

Pour boiling water over oats. Let stand while preparing the following: Sift together flour, cinnamon, soda and salt. Add to sugars, eggs and oil, then add oatmeal. Mix well. Bake and 350° for 30 minutes, in a greased and floured pan.

Topping:

Dissolve thoroughly sugar in milk, add butter and cook. Stir almost constantly until mixture boils and becomes thick. Remove from heat, add vanilla, nuts, and coconut. Pour over cake while hot.
