Cabbage and Lime Salad with Roasted Peanuts

Very flavorful and healthy. From The Lee Bros cookbook “Simple, Fresh, Southern”. In my version below, I leave the cabbage crispy and add less lime. Slice cabbage as thin as possible which makes it a softer salad.

ingredients

  • 1/2 red cabbage, cored and very finely shredded
  • 1/2 green cabbage, cored and very finely shredded
  • 1 bunch fresh baby spinach, cut into 1/4" ribbons
  • 1 lime, segmented, segments cut in half
  • 1/8 cup fresh lime juice (about 1 lime)
  • 1 tbsp Dijon mustard
  • 1/2 tsp ground cumin
  • 1/4 cup + 1 tbsp peanut oil
  • 1/2 cup roasted unsalted peanuts, coarsely chopped
  • TT salt and pepper
