Vera's Empanadas
ingredients
- 1 lb ground beef (85% beef)
- 2/3 cups onion, very finely chopped
- 1 cup celery, very finely chopped
- 1 cup green olives with pimiento, finely chopped
- 2 1/2 oz mushrooms, finely chopped
- 1 small can (8-oz) tomato sauce
- 2-3 pkgs refrigerated pie crust
- 4 oz shredded cheddar cheese

1, Brown ground beef then drain off accumulated liquid. Set aside.

2. Saute finely chopped onions and celery until tender, then add in olives and mushrooms.

3. Stir in ground beef and add tomato sauce.

4. Prepare pie crust and work in cheddar cheese. Roll out to desired thickness and cut into rounds using a round disc or empanada cutter. Put small amount of filling in center, fold over and crimp edges, sealing well. Freeze until ready to bake and serve.

5. Place frozen empanadas on cookie sheets and bake at about 400 degrees for about 30 to 40 minutes.
