Italian Wedding Soup
ingredients
- Meatballs
- 8 - 10 oz ground chicken
- 2 links chicken sausage
- 1/3 cup fresh bread crumbs
- 1 clove garlic
- 2 Tbl fresh parsley
- 2 Tbl grated pecorino cheese
- 2 Tbl grated parmesan
- 1 egg
- 1/2 Tsp salt
- 1/4 Tsp pepper
- Soup
- a little olive oil
- 1/2 cup chopped onion
- 1 stalk chopped celery
- 1 large chopped carrot
- 8 cups chicken stock
- 1/4 cup white wine
- 1/2 cup small pasta (tubettini or stars)
- Handful of fresh dill
- 1 bag of fresh spinach

Combine meatball ingredients. Drop rounded teaspoons of meat on greased baking sheet and bake at 350 for 20 minutes.

Saute celery, carrot, and onion in olive oil for 8 – 10 minutes

Add chicken stock, white wine, and pasta. Cook until pasta is tender.

Stir in dill and spinach. Simmer a few minutes and serve.
