  • 2 Tbsp. extra-virgin olive oil
  • 1 small red bell pepper, roasted and diced
  • 1 garlic clove, minced
  • 2 tsp. lemon juice
  • 1 c. imported black olives, such as Niçoise or Kalamata, pitted and chopped
  • 2 Tbsp. chopped fresh flat-leaf parsley
  • 1 1/2 Tbsp. chopped fresh mint
  • 4 oz. feta cheese
