Toast the cumin seeds prior to grinding for more intense flavor.

ingredients

  • 4 c. vegetable stock
  • 3 c. couscous
  • 1 c. dried apricots, chopped
  • 1 1/2 c. cherry tomatoes, halved
  • 1 15 oz. can cooked chickpeas, rinsed and drained
  • 1 c. green onions, thinly sliced
  • 1/4 c. parsley, chopped
  • 3/4 c. slivered almonds, toasted
  • 2 whole oranges, segmented
  • 3/4c. orange juice
  • 2 Tbsp. orange zest
  • 3 Tbsp. balsamic vinegar
  • 1/2 Tbsp. ground cumin
  • 1/2 c. extra-virgin olive oil
  • Salt and pepper to taste
