Linguini with Fresh Tomatoes and Basil
ingredients
- 3 medium ripe tomatoes, chopped
- 1/3 cup fresh basil, thinly sliced
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/2 tsp pepper
- 8 ounces linguini pasta
- 3/4 cup parmesan cheese, shredded
- 1 pound shrimp, peeled & de-veined
directions
Boil linguini for 5-7 minutes until al dente. Drain and keep in colander. In a saucepan, heat oil and sauté garlic for one minute. Add 1 pound of shrimp and sauté 5 minutes until pink. Add chopped tomatoes and basil and salt and pepper to taste. Add parmesan cheese and toss.
