Sweet Potato Dish
This is so sweet, it can almost be a dessert.
ingredients
- 1 large can (40oz.) yams
- 1 small can (20 oz.) yams
- 1 3/4 c. sugar
- 3 eggs, beaten well
- 3/8 c. melted butter
- 3/4 c. evaporated milk
- 1 3/4 t. vanilla
- 1 t. salt
directions
Drain yams. Place in a large bowl and whip with mixer. Add the rest of the ingredients and blend until smooth. Grease a 9x13" pan. Put the mixture in the pan. Make topping.
Topping
- 1
1 3/4 c. brown sugar
- 2
1/2 c. flour
- 3
1/2 c. melted butter.
- 4
2 c. pecans, chopped
Mix brown sugar, flour and butter and spread over the top of the yam mixture. Sprinkle pecans over the top. Bake uncovered at 350° for 35 to 40 minutes.
