Barbeque Pork Tenderloin
This recipe comes from Pampered Chef and works best with a stoneware dish that’s covered.
ingredients
- 2, 1-lb. pork tenderloins
- Garlic-infused canola oil
- BBQ rub
- 1 large sweet onion
- 1 c. ketchup
- 1/4 c. packed brown sugar
- 2 Tbsp. BBQ rub
- 2 tsp. vinegar

Trim fat and silverskin from tenderloins. Slice onion into 1/4" thick slices and cover bottom of stoneware baking dish. Spray oil onto tenderloins. Evenly rub pork and place on top of onions. Cover and microwave on high 10-14 minutes, checking temp at 8 minutes, then every 2 minutes until meat is 150°. Remove and let stand, covered, for 10 minutes. Slice thinly and serve with our without sandwich rolls.

BBQ Sauce: Combine ketchup, sugar, 2 T. of rub and vinegar in a saucepan. Boil, stirring; remove from heat and serve with onions from the bottom of the dish as a garnish.
