Potato Rolls
Everyone is excited when these rolls show up on holidays!
ingredients
- 1 c. mashed potatoes
- 1 c. sugar
- 1 c. lard (shortening)
- 1 quart milk,scalded
- 1 yeast cake
- 1/2 c. lukewarm water
- 2 c. flour
- 2 t. baking powder
- 1 t. baking soda
- 2 t. salt.
- More (at least 6 c. flour)

Dissolve the yeast in the water. Mix the potatoes, sugar, shortening and scalded milk. Cool. Add the yeast mixture when cool (lukewarm.)

Sift 2 c. flour, baking powder, baking soda, salt. Add liquid. Mix and let rise 2 hours in a warm place with a towel over it.

Then work in more flour until it can be handled (not sticky.) You need a very large bowl. Knead the dough working in flour on a floured surface. You can now store the dough in a bowl in the refrigerator, covered with plastic wrap (like a skin.)

To make rolls, roll out a piece of dough on a floured surface about 1/2 inch thick. Cut out rolls. Place in 9x13 greased baking pan, touching each other in rows. Spread with melted butter and let rise for about an hour, covered with a towel. Bake at 350° for 15-20 minutes.

You can make cinnamon rolls with this dough by rolling it out, spreading butter on the dough, sprinkling heavily with cinnamon sugar, rolling into a tube and cutting into 1 1/2 inch pieces.
