Kickin' Chicken Casserole
An easy mexican casserole with a chipotle kick. The kick of the chipotle is offset by the cool of the sour cream, green onion, and tomato.
ingredients
- 1 can (14 oz) red enchilada sauce
- 1 can chipotle chiles in adobo sauce, you will need 3 chiles, finely chopped, and 1 tablespoon sauce
- 2 cups chopped chicken
- 2 cups shredded monterey jack cheese
- 1 (14 oz) can black beans, drained
- 1/2 cup diced sweet onion
- 1 (5 oz)can diced green chiles
- 1 tablespoon olive oil
- 1/2 cup shredded cheddar cheese
- 1 bag tortilla chips
- 1/2 cup sour cream
- 1/4 cup chopped tomato
- 2 tablespoons chopped green onion

Mix chopped chipotle and adobo sauce with enchilada sauce.

Preheat oven to 350 degrees.

Heat oil in a pan and saute onions until softened. Mix onions,diced green chiles, chicken, and black beans in a bowl.

Grease a 2-3 quart casserole dish. Spread 2-3 tablespoons of mixed sauce on bottom of casserole. Place a layer of tortilla chips in casserole, enough to cover bottom of dish, overlapping as needed. Spread 4-5 tablespoons of sauce over chips. Spread 1/2 of chicken mix over sauce and chips, top with 1/2 cup of monterey jack cheese and top with another layer of chips. Spread 4-5 tablespoons of sauce on chips, make another layer of chicken mix and 1/2 cup monterey jack cheese, top with aother layer of chips. Pour remaining sauce over top layer of chips, top with remaining cheeses(monterey jack and cheddar).

Bake covered for 30 minutes or until bubbly. Just before serving, top casserole with sour cream, then sprinkle with tomato and green onion. Serves 6.
notes
Control the amount of spice by adding more or less chipotle chilies and adobo.
