Okra a la Creole
A meal in one - with smoked sausage and shrimp if you like!
ingredients
- 4 tablespoons olive oil
- 2 cups chopped onion
- 1 cup chopped parsley
- 1 cup chopped green onions
- 1 cup green pepper
- 2 lg cans diced tomatoes
- 8 oz tomato sauce
- 2 tablespoons minced garlic
- 2 tablespoons soy sauce
- 1 cup dry white wine
- 1 lb smoked sausage, cut in half long ways and cut in 1/4 inch slices
- 1 - family size frozen okra
- 1 tablespoon Louisana hot sauce
- Salt to taste

In a large stock pot, sauté onion, parsley, green onions, and bell peppers until onions are clear.

Stir in tomatoes, tomato sauce, garlic, soy sauce, wine and sausage. Cover and cook over medium heat until boiling, stirring occasionally.

Stir in okra, salt and hot sauce, reduce heat to low and simmer covered. Stir occasionally, cooking until okra is tender - about 45 mins.

Serve over rice
notes
If you want to add shrimp, sauté shrimp separately and put on rice along with creole.
