High in vitamin A and packed with lycopene (fights cancer). Dr Oz says eat cooked tomatoes every day and this is an easy way to do it.

ingredients

  • 1 Quart (32 oz) Tomato Soup
  • (Trader Joes’ Organic, boxed soup is perfect)
  • 1 bag fresh spinach, remove stems
  • OR 1 bag frozen spinach
  • 12 oz Mixed Beans (Trader Joe’s Steamed Six Bean Medley)

    Warm soup, add spinach and beans.

    Cook til heated through.

  • 3

    Non-vegan Options: Top with goat cheese or sausage.
