Winter Tomatoe Soup
High in vitamin A and packed with lycopene (fights cancer). Dr Oz says eat cooked tomatoes every day and this is an easy way to do it.
ingredients
- 1 Quart (32 oz) Tomato Soup
- (Trader Joes’ Organic, boxed soup is perfect)
- 1 bag fresh spinach, remove stems
- OR 1 bag frozen spinach
- 12 oz Mixed Beans (Trader Joe’s Steamed Six Bean Medley)

Warm soup, add spinach and beans.

Cook til heated through.

Non-vegan Options: Top with goat cheese or sausage.
