HAM, EGG & HASH BROWN BAKE
Hearty, tasty breakfast---a good variation from the norm.
ingredients
- 1-32 oz. pkg. frozen cubed hash brown potatoes, thawed
- 1 pound cubed turkey ham
- 1 cup shredded cheddar (substitute soy or rice cheese, divided
- 3 Tbsp. dry minced onion (or fresh)
- 3 Tbsp. chopped green or red pepper
- 8 eggs (or 4 eggs and enough EggBeaters to equal 2 cups)
- 1 1/2 cups milk
- 1/4 tsp. salt
- 1/2 tsp. cayenne pepper
- 1 dash paprika

In a large bowl, combine hash browns,

ham, onion, green pepper, and 1/2 cup cheese. Spoon into greased 9x13 baking dish.

In a bowl, beat together until smooth the eggs, milk, salt, and cayenne pepper. Pour over potato mixture. Sprinkle with paprika.

Bake, uncovered, at 350° F. for 45-50 minutes until golden, and knife inserted in center comes out clean (145° internal temperature.)

Top with remaining cheese.

Using egg substitute, turkey ham and veggie or rice cheese makes this a healthier dish.
