Do Ahead Turkey Wing Gravy
Timing is everything when it comes to getting a huge turkey dinner on the table. This is a fantastic way of getting a jump on your Thanksgiving Day dinner. Also some of my last turkeys have had so much juice in the pan that they would not have made good gravy.
ingredients
- 3 pounds turkey wings 4 pkgs, 12 wings
- 6 tablespoons unsalted butter
- 3/4 cup all-purpose flour
- Kosher salt and freshly ground black pepper
- for stock (or box stock)
- 3 Tbsp. olive oil
- 1 medium onion, halved
- 4 carrots, chopped
- 2 Tbsp. Chicken (better than bouillon)

- 2 pkg. McCormick Turkey Gravy mix plus 2 c. water

Heat the oven to 350 degrees F.

Put the turkey wings* into a two large roasting pans, sprinkle with season salt and roast them until they are dark golden crispy brown but not burnt, about 1 hr 30 minutes.

(This next step can be completely omitted if you would like to use box stock.) (Just add 1 large box stock to the wings over the stove top to release the brown goodness)

Heat 3 tablespoons olive oil in a large stock pot over medium-high heat. Add the onion, carrots, chicken bouilion and pepper and cook for 5 minutes. Add the crispy turkey wings. Pour some water into the roasting pan and scrape up all the browned bits on the bottom; add this to the pot. Cover everything in the pot with cold

water by 1-inch and bring to the boil, skimming any foam that rises to the surface. Reduce the heat and simmer for about 1 1/2 to 2 hours. Strain out the solids and discard.

Wipe out the pot and put it over medium heat. Melt the 6 tbsp.butter with the remaining 4 tablespoons olive oil and add the flour. Cook this roux, stirring frequently, until it is golden brown. Slowly whisk in the strained stock being careful to work out any lumps. Add the season MC Cormick Turkey Gravy packages..and a bit more stock or water up to 4 more cups could be used depending on the thickening. Cook until the gravy has thickened, and coats a spoon, about 15-20 minutes.

At this point you can store in a 3 qt. Tupperware containers or zip lock freezer bags, freeze or refrigerate until the day you need it...then thaw and warm.
