Salmon Fillets with Creamy Cucumber Sauce
A refreshing summertime dish, the creamy sauce really brings out the taste of the salmon!
ingredients
- 1 Medium Cucumber, peeled and chopped
- 1 Medium Sweet Onion, finely chopped
- 1 Clove Garlic, peeled and chopped
- 1 tsp Fresh Lemon Juice (save lemon halves for salmon)
- 1 Cup Sour Cream
- 1 TBSP Worcestershire Sauce
- 1 tsp Cider Vinegar
- 2 tsp Mayonnaise
- 3 TBSP Fresh Dill, chopped
- 1 tsp Sugar
- Salt and Pepper to taste
- Salmon fillets (6oz fillet per person-recipe makes enough sauce for 6)

In a small bowl, combine cucumber, onion, garlic, and lemon juice. Place mixture in a sturdy paper towel and squeeze out juice. Place back into small bowl and add sour cream, Worcestershire, vinegar, mayonnaise, dill, sugar, salt and pepper. Mix until well blended. Place in the refrigerator until ready to use.

Oil grill grate and preheat to medium-high.

Rub lemon halves all over flesh side of salmon fillets and season with salt and pepper. Grill, flesh side down for 4 minutes. Turn fillets over and grill until just cooked through, about 4-6 minutes. Serve topped with cucumber sauce.
