White Chili
A nice change from the traditional red beef chili. Choose pork or turkey for the meat.
ingredients
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced bell pepper, any color
- 3 tablespoons olive oil
- 1 lb ground pork(can substitute ground turkey if desired)
- 1 can (14 oz) diced tomatoes with green chilies
- 1 can (14 oz) chicken broth
- 3 cans (14 oz) white cannellini beans, drained, 1/2 can beans reserved in a separate bowl
- 1 1/2 teaspoons chili powder
- 1 teaspoon each salt, cumin and dried parsley
- 1/2 teaspoon each oregano and thyme
- 1/4 teaspoon each garlic powder, black pepper, and ground coriander

Heat olive oil in a large pan and saute diced vegetables until softened, remove vegetables to a bowl and set aside. Brown ground pork in same pan. Add sauteed vegetables, diced tomatoes, chicken broth, 2 1/2 cans of beans, and all the spices.

Mash reserved 1/2 can of beans with a fork and add to pot. Stir until mixed. Bring to a boil over medium heat then lower heat and simmer chili for 30 minutes. Serve.
