SPICY SAUSAGE AND PASTA
The heat from the spicy sausages makes this extra tasty.
ingredients
- 1 1/4 lb. hot Italian sausages, cut
- into slices
- 1 C red wine (see Notes)
- 1/2 tsp salt
- 1 pkg - 12 oz. penne pasta
- 2 large red bell peppers (cut into
- strips)
- 1 large onion, chopped
- 1/4 C olive oil
- 3 garlic cloves, chopped
- 1/4 C parsley
- 1 tsp dried basil
- 1/2 C grated Parmesan

* Cook & stir sausage slices over medium heat until cooked. Drain fat. Stir in wine and salt. Cook about 10 minutes longer. Remove from skillet.

* Prepare pasta. * Meanwhile cook & stir onions, adding basil, parsley, & peppers for last couple minutes.

* Combine all with pasta. Sprinkle Parmesan on top of each serving.
notes
I prefer the flavor in Holland House Red Cooking Wine (which is found in the grocery store next to the vinegars and oils) - instead of using "real" red wine. This is simply my preference and a suggestion, but obviously use what you prefer to cook with.
