- 1 large egg
- 1/3 cup buttermilk
- 1 pound boneless skinless chicken breast, cut into bite size pieces
- 2 cups panko bread crumbs
- 1 teaspoon paprika
- 2 teaspoons garlic powder
- 1 tablespoon Italian seasoning
- Salt and pepper

1. Whisk the egg and buttermilk in a medium bowl.

2. Soak chicken pieces in egg mixture for at least an hour

3. Preheat oven to 375

4. in another shallow bowl combine panko with paprika, garlic powder, Italian seasoning, and salt and pepper, to taste

5. Lift chicken from buttermilk, letting excess liquid drain back into the bowl, then dip into panko and turn to coat on all sides.

6. place nuggets on wire rack (which is on a cookie sheet)

7. bake at 375F for ~15 minutes. bake longer for a bit crispier crust.
