Samosas and Tamarind Chutney
ingredients
- Samosas:
- 6 large russet potatoes
- 1 tablespoon sunflower oil
- 1 cup frozen peas
- several tablespoons of jeera (roasted cumin) powder
- 1/2 teaspoon of turmeric
- 1-2 packages of frozen puff pastry sheets
- Tamarind Chutney:
- 2 tablespoons tamarind concentrate
- warm water
- 2 teaspoons sugar
- 1/2 teaspoon chili powder
- 1 teaspoon jeera powder

Samosas:

Preheat oven to 350 degrees Fahrenheit.

Boil potatoes in water until soft. Remove from heat, strain out water.

Cut potatoes into cubes.

Place potatoes in large pot with oil, peas, jeera powder, and turmeric. Cook on low heat for several minutes. Add salt to taste. Remove from heat.

Place pastry sheets on floured surface. Roll out dough. Cut each rectangular sheet into three squares. Cut squares in half diagonally to make triangles.

Stuff triangular pieces with potato filling.

Place samosas on baking sheet.

Bake for 20 minutes.

Tamarind Chutney:

Combine tamarind concentrate with a small amount of water. Add sugar, chili, and jeera powder to taste.
