Turkey Sage Chowder
Great for left-over turkey after Thanksgiving. Add some left-over vegetables, like corn or carrots for a variation.
ingredients
- 6 bacon slices, coarsely chopped
- 1 C chopped onion
- 1 lb. russet potatoes, peeled, cubed
- 4 C whole milk
- 1 C chicken broth
- 2 cans condensed cream of potato soup
- 2 Tbs. chopped fresh sage
- 2 1/2 C diced cooked turkey
- 1 can cream of celery soup
directions
Cook bacon until crisp. Transfer to paper towels to drain. Pour off all but 2 Tbs. drippings from pan. Increase heat to med-high, add onions and saute until tender, about 5 minutes. Mix in potatoes, milk, broth, potato soup, celery soup and 1 Tbs. sage. Bring to a boil. Reduce heat to med-low and simmer until potatoes are tender, stirring occasionally, about 10 minutes. Add turkey meat, bacon and remaining sage. Simmer until heated through, stirring occasionally, about 4 minutes. Season to taste with salt and pepper. Serve.
