Vegan Oatmeal Banana Chocolate Chip Cookies
ingredients
- 1 cup 50-50 flour (half all-purpose white flour and half all-purpose wheat flour)
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup brown sugar
- 1 cup rolled oats
- 1 teaspoon vanilla
- 1/4 cup vegetable oil
- 1 teaspoon molasses
- 2 tablespoons almond milk or soy milk (might need to add additional milk to combine all ingredients)
- 1/4 mashed ripe banana
- 1/4 vegan chocolate chips
- 1/4 cup raisins

Preheat oven to 375°F. Lightly grease a baking sheet and set aside.

In a large bowl, stir together flour, baking powder, sea salt, cinnamon, nutmeg, brown sugar, rolled oats.

Thoroughly mix in a food processor or by hand vanilla, molasses, vegetable oil, soy milk, and banana once combined gently fold in the vegan chocolate chips.

Place 16 equal sized scoops on that aching sheet and bake for about 12 minutes. Remove from the oven and in that cool on a baking sheet for one minute and then transfer to a wire rack to complete cooling.
