Brian and I had this growing up on Halloween night after coming home from trick-or-treating and of course after Thanksgiving with the leftover turkey!

ingredients

  • 2 tbsp. butter
  • 1 tbsp. olive oil
  • 2 cups turkey
  • 1 large onion chopped
  • 1 garlic clove minced
  • 4 cups chicken broth
  • 1 cup water
  • 1 8 0z. package of elbows
  • 1 lb. can Italian tomatoes (w/ basil) –don’t drain
  • 1 lb. can red kidney beans
  • Salt/pepper
  • Parmesan cheese

    Heat butter and oil

  • 2

    Add turkey, onion, garlic for 5 minutes (stir occasionally)

  • 3

    Add stock and water- bring to boil

  • 4

    Add macaroni- reduce and simmer uncovered for 10 minutes

  • 5

    Add tomatoes, beans, salt and pepper to taste

  • 6

    Simmer 5 minutes, stir occasionally

  • 7

    Sprinkle servings with parmesan cheese

  • 8

    Serve with Italian bread and Enjoy!
