Mixed Berry Trifle

We grow our own strawberry’s and when they are ripe they need to be used within a few days of picking. Strawberry shortcake is a great go to recipe but this trifle is a refreshing alternative. I came up with this dessert with the need to use my berries before they became over ripe. This is more of a concept than a recipe. Play with it and use different ingredients. You may want to use creme fresh, custard or jam instead of the pudding. You could substitute the angel food cake with pound cake or change out the flavor of the pudding to chocolate and add bananas instead of berries. These are just a few suggestions.

ingredients

  • any fresh berries you have
  • 2 box’s vanilla pudding; cooked according to directions
  • angle food cake; cut up into cubes
  • whipped cream

directions

1. Layer in a trifle bowl or any glass bowl, angle food cake cubes, then part of the pudding and then some berries. Make sure each layer is up against the out side of the bowl in order to see the layers. Repeat layers until all ingredients are used up. At this point you could garnish with whipped cream or garnish each plate with a dollop of whipped cream as you serve. A sprig of mint would be a nice garnish on the trifle.
