French Breakdfast Muffins
Moist and light but not for the calorie counter or for a “healthy” diet.
ingredients
- 1/3 c shortening
- 1/2 c sugar
- 1 egg
- 1 1/2 c flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 c milk
- 1/2 c sugar
- 1 tsp cinnamon
- 1/2 c butter

Heat oven to 350. Grease 15 medium muffin tins. Mix shortening, 1/2 c sugar and egg thoroughly. Stir together flour, baking powder, salt and nutmeg. Stir the flour mixture and the milk alternately into the shortening mixture. Fill muffin tins 2/3 full.

Mix 1/2 c sugar and the cinnamon. Roll hot muffins in melted butter, then in sugar mixture. Serve warm.
notes
You can use the mini muffin tin and the recipe will make about 24. Old recipe requested by Jon. Make just for a special treat when you need some comfort food.
