Baked Fish in Packets
This was probably the first recipe for fish that I ever learned to make. Its super easy and tastes good, too.
ingredients
- 4 fillets of mild white fish (sole, tilapia, etc.) If using sole, you may need more than one fillet per person, as they tend to be small.
- 2 lemons, sliced thin
- 4 scallions, sliced
- Olive oil for brushing
- salt, pepper, dill and granulated garlic to taste.
directions
- 1
Preheat oven to 450°.
- 2
Cut four pieces of foil, each large enough for one portion of fish.
- 3
For each portion place scallion slices on foil, and lay fish over.
- 4
Brush fish with olive oil and season with salt, pepper, dill, and garlic.
- 5
Lay lemon slices in a row on top of fish.
- 6
Seal packets and place directly on oven rack for 10 - 12 minutes, until fish flakes easily.
