Easy Frittata
I made this recipe up with whatever I had in my fridge. You can use all kind of veggies but I had bacon and potatoes so that’s what I used.
ingredients
- 6 eggs, beaten
- 1-ounce Parmesan, grated
- 1/2 teaspoon black pepper
- Pinch salt
- 1 teaspoon butter
- Diced fingerling potatoes
- Bacon
- 1 small diced onion
- 1 tablespoon chopped parsley leaves
- 1 tablespoon chopped dill
- 1 tablespoon chopped basil

Preheat oven to broil setting.

In a non stick skillet (I used a cast iron skillet) brown bacon and when cripsy remove with slotted spoon leaving all that rendered down fat. Add diced potatoes and diced onions, cook until tender and cripsy.

In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, salt, dill, basil and parsley. Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top.

Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan and cut into 6 servings. Serve immediately.
