- 2 Cups all-purpose flour
- 1 1/2 Cups sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 Cup shortening (half margarine or butter, softened, if desired)
- 1 Cup milk
- 1 teaspoon vanilla
- 3 eggs

350 degree oven.

Grease and flour oblong pan, 13 x 9 x 2 inches, or 2 round layer pans, 8 or 9 inches.

Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly, 30 seconds.

Beat on high speed, scraping bowl frequently, 3 minutes. Pour into pan(s).

Bake until wooden pick inserted in center comes out clean: oblong 40 to 45 minutes, layers 30 to 35 minutes, cupcakes 20 min. (For cupcakes, fill each half full.) Cool.
