Baked Lemon Cheesecake
ingredients
- 250g Nice Biscuits, place in blender or food processor to form crumbs
- 120g Melted Butter
- 3 eggs, lightly beaten
- 1/2 cup Castor Sugar
- 3 x 250g Cream Cheese, softened
- 3 tsp Grated Lemon Rind
- 1/4 cup Lemon Juice

Lightly grease 22cm spring form pan.

Combine biscuit crumbs and butter in a bowl. Press crumb mixture over the base and sides of spring form tin. Refrigerate for One hour.

Preheat oven to 180 degrees Celsius.

Beat eggs and sugar in a bowl with an electric mixer until pale and thick. Add cream cheese, lemon rind and juice. Beat until mixture is smooth and creamy.

Pour into tin and bake for 45 minutes.

Cool in oven with door ajar then refrigerate for several hours or overnight.
