Sunlight Carrot Cake

  • 1 1/2 cups vegetable oil
  • 2 Cups sugar
  • 3 eggs
  • 2 Teaspoons vanilla
  • 2 Cups Flour
  • 2 Teaspoons Cinnamon
  • 2 Teaspoons Baking Soda
  • 1 Teaspoon salt
  • 1 – 7 oz pkg coconut
  • 2 Cups shredded carrots
  • 13 1/2 oz can crushed pineapple drained
  • 1 Cup Chopped walnuts (optional)


Preheat oven to 350 degrees. Mix oil, sugar, eggs and vanilla. Sift together flour, cinnamon, baking soda and salt. Add to the oil and sugar mixture and mix well. Stir in coconut, carrots, pineapple and nuts. Pour into a greased and floured pan. Bake at 350 degrees for 50 to 60 minutes
