Pinto Beans

ingredients

  • 2 lb bag of pinto beans
  • Ham hock and/or bacon slices
  • 2 Tlbs. sugar
  • 1 Onion chopped small or a garlic pod or two
  • Salt to taste
  • Chili powder

directions

Soak beans overnight. Boil about 20 minutes on stove, then drain off the water. Start over with fresh water and add other ingredients. Cook on low heat about 2-1/2 hours or until tender. If necessary to add water while cooking, be sure to add hot water. The same process can be followed when cooked in a crockpot - boil beans on regular stove, drain, then place in crockpot. The beans cooked in crockpot can be cooked all day. You can cook a 1 lb. package. I usually cook the larger and freeze in small containers and defrost when needed.

Be sure to pour out your beans and hand sort them and get all the rocks out.
