Mom's Sugar Cookies
My mom never met a sugar cookie she didn’t like. And these are the ones she loved to bake.
ingredients
Sugar Cookies- 1 c. shortening (1/2 c. butter, 1/2 c. Crisco)
- 1 1/2 c. sugar
- 2 eggs
- 1 tsp. baking soda
- 1 tsp. baking powder
- 4 c. flour
- pinch of salt
- 5 T. milk
- 1 tsp. vanilla
- Whites from 3 large eggs
- 1/2 tsp. cream of tartar
- 1 lb. confectioner’s sugar
- Food coloring, as desired

Sugar Cookies

Preheat oven to 350.

Mix shortening, sugar, eggs, milk, and vanilla. In a separate bowl mix flour, salt, soda, and baking powder. Add to shortening mix. Chill for 2 hours.

Roll out to 1/8 inch thickness and cut into shapes.

Bake on ungreased cookie sheet 5-8 minutes.
Royal Icing

In a large bowl, beat egg whites and cream of tartar with electric mixers until frothy. Gradually add confectioner’s sugar and beat 5 to 7 minutes until glossy and stiff peaks from when beaters are lifted.

Add food coloring, if desired, with a toothpick, a small amount at a time, mixing well after each addition until you get the shade you want.

To thin: stir in a few drops of water. Icing should be thin enough to apply with a brush or spatula but thick enough to coat a toothpick without dripping. Makes 2 1/2 cups.

Add colored sugars before baking, or ice with royal icing after cool.
